Slow Cooker BBQ Pork Chop

Served with broccoli slaw tossed in lime juice,  olive
oil, garlic and onion powders, dash paprika on top.
Not too long ago, I made pork chops with apple chutney. Living alone for the time being, with caveboy John being gone to fight the good fight, I often have to freeze cuts of meat that I can't use right away. Pork, when it's frozen and thawed, tend to cook dry and tough.

Paleo Solution: slow cooking. (Excuse the pun.)

The sauce is courtesy of Son of Grok, who's been doing the primal/paleo thing for a while. If you're unaware, Grok is Mark Sisson's paleolithic alter ego and head caveman in the primal revolution. (Paleo and Primal diets vary slightly - check out our reference tab for further info.) Unfortunately, it seems SoG gone off air for the time being. We mourn his disappearance but pay tribute in tonight's dish.

Paleo BBQ Sauce

Note: I omitted the salt, used about 1/2 cup more of stock and let it cook down for an hour to allow the flavors to come together and intensify. I also used 1/2 tsp of ground mustard seed instead of dijon mustard.

Slow Cooker BBQ Pork Chop

Place pork chops in slow cooker and cover with paleo bbq sauce. Cook on high for 4 hours. It stays tender and falls apart. (It literally fell apart as I was trying to plate.)
