Slow Cooker Pork Chops

I've been living a very minimalist lifestyle lately... packing veggies and chicken breast for lunch, fasting or whipping up something quick and simple for dinners.

Anywho, a recent trip back home awarded me with a bunch of pork chops so I decided to make  SUPER simple slow cooker chops... I was able to set everything up, fire up the slow cooker and head out to WOD. By the time I got back to the apartment, the entire place smelled delectable and the chops were tender and ready for consumption!

Slow Cooker Pork Chops
3/4 cup almond flour
1/2 tspn ground mustard
1/2 tspn garlic powder
1/2 tspn black pepper
4 chops
14 oz chicken broth

Mix 1/2 cup flour and spices and dredge the pork chops. In a cast iron skillet, brown all sides of the chops - a few minutes on each side. Add the remaining flour and chicken broth to the dredging mixture and whisk until well blended. Pour into the slow cooker, add the browned chops and turn on High for 2-3 hours, or until tender.

The flour/broth mixture will turn into a gravy of sorts... the texture is a bit different due to the consistency of the almond flour, but it was still yummy. I had my chop with some roasted acorn squash and kimchi :)
