Braised Chicken Thighs, Courtesy Martha Stewart

That crazy old bat Martha is rather helpful at times. Her recipes are chock full o' real food, and sometimes don't even require paleo substitutions. Crazy, huh? And in the interest of trying to stay healthy on short spurts of free time when Baby Ro is passed out or content to keep himself entertained by staring at something off in the distance, I search for easy peasy recipes.

I've come to realize that as this blog has evolved, my recipes have gone from the very paleo basic to often time consuming, and at times, complicated. Not that either of those things are bad, but in trying to feed the little one every 2-3 hours from my own body, feed myself and CB John aka Baby Daddy, sneak in naps when I can, workout, keep the house in order and work, I have to stay efficient. (Interesting that work comes last...) It's also nice when John is home and I have the time and the hands free to make something a bit more grown up than Braised Chicken Thighs... -_-

Please do note, though, that I browned my chicken in butter and not olive oil because I only have extra-virgin olive oil which is prone to oxidation on high/direct heat.
