Paleo Sweet (ch)Eats: Lemon Coconut Meringue

Try not to eat all of these in one sitting, because they're delectably light and a perfect little treat!

Lemon Coconut Meringue
2 egg whites
1/4 cup granulated honey
Juice of one lemon plus zest
1 1/3 cup coconut flakes

Pre-heat the oven to 325F.

Beat the egg whites until soft peaks. Slowly add in the honey. Then add the lemon juice and zest. Remove from mixer and gently fold in the coconut flakes.

Spoon out little peaks onto a parchment paper lined baking sheet and bake for 20 min.
