"Soy" Glazed Pork Chops

I've been on a bit of an Asian kick this week... Taking it back to my roots and using a lot of coconut aminos to fulfill that soy sauce paleo alternative. In contrast to the usual stir-fry, I whipped together this soy-glazed dish today. I threw the marinade together this morning before I left to teach CrossFit, and it was ready to cook by the time I got home!

"Soy" Glazed Pork Chops

4 boneless pork chops
1 cup low sodium chicken stock
2 tbsp coconut aminos
2 tspn fresh ginger- grated
2 cloves garlic- minced or smashed

In a zip-loc back or container, whisk together all the ingredients except for the pork. Place the pork in the marinade and refrigerate for 1-3 hours.

Heat your FOC in a skillet and cook the marinated pork until cooked through- about 4 minutes on each side. Once cooked through, let the pork rest before cutting to serve.

While resting, you can sautée greens of your choice in the glaze as a side. I had my chops with a seaweed salad.
